Registration for Salon Culinaire at next year's Hospitality 2011 show at the NEC, Birmingham, is now open.
With nearly 60 competitions across the three-day event (24-26 January), including 12 new classes for Live Theatre and Salon Display, it will be the biggest salon at Hospitality yet.
Returning will be La Parade des Chefs, which will see national teams representing England, Scotland and Wales creating their own menus as they go head-to-head.
Live Theatre, which is sponsored by Compass Group, will see three new classes: Elior Apprentice Skills Challenge, Lexington Food Service Challenge and Vegan Dish Challenge sponsored by the Vegan Society.
Other features of the schedule include the Schwartz Chef Flavour Pairing Challenge and Sodexo Chef of the Year, as well as the Sustainable Fish Dish, sponsored by M&J Seafood, and Alaska Seafood Challenge.
Peter Griffiths, salon director, said: "Salon Culinaire continues to go from strength to strength in terms of the standards set and the support it receives from the industry.
"Competitions help competitors to raise their game, offer healthy rivalry, cultivate friendships and set benchmarks."
A full salon culinaire programme of events and entry form is available at www.hospitlaityshow.co.uk/salon - entry deadline is 1 December 2010.
