His appointment comes after Dishoom’s sales passed £100m for the first time last year.
Brian Trollip has been promoted to chief executive at Dishoom as the restaurant group looks to its next stage of growth.
He joined the business in 2010 to oversee its operations and has been an integral part of the company’s senior team, led by co-founders Shamil and Kavi Thakrar, for over a decade.
Trollip has spent the past four years leading the business as managing director, a role he took on in October 2020 during a turbulent time for the group.
As chief executive he will oversee all aspects of Dishoom as it continues to grow and evolve, including a team of over 2,000 employees.
His appointment comes after Dishoom saw turnover rise 23% to pass £100m for the first time last year. Pre-tax profits also jumped from £4.7m in 2022 to £7.4m in 2023 and the company hired more than 300 new staff.
Sales were boosted by the opening of a 235-seat Dishoom restaurant in London’s Battersea Power Station in 2023.
The group also launched its first spin-off Permit Room bar in Brighton last year. This was followed by a second site in Cambridge this summer while a third will soon launch in Oxford.
Dishoom, which is inspired by the old Irani cafés of Bombay, was founded by Shamil and Kavi in London’s Covent Garden in 2010.
It has since expanded to seven restaurants under its main Dishoom brand in London and one each in Edinburgh, Manchester and Birmingham.
Writing in its latest accounts, the co-founders said Dishoom “continues to evaluate potential new restaurant openings in the UK”.
