Brian Hughson is new head chef of the Dorchester Grill

London's Dorchester hotel has confirmed the appointment of Brian Hughson as the head chef of its Grill restaurant.

The move, first reported by Kitchen Rat in January, sees Hughson replace The Grill's previous head chef Aiden Byrne, who left to run his own pub in Lymm, Cheshire.

His menu at The Grill is focused traditional British dishes with produce sourced from across the British Isles. Alongside new dishes, Hughson has reinstated classics from the original Grill menu including the salmon carving trolley first introduced at the restaurant when it opened in 1931.

Hughson said he was “extremely proud” to have joined The Grill at The Dorchester.

The hotel’s general manager Roland Fasel added: “Brian Hughson is a well respected chef in London and I believe guests at The Grill will be deeply impressed by his new menu of modern British cuisine.” Â
