The new opening will draw inspiration from Scandinavian food and design.
Chef Adam Simmonds is to open a flagship restaurant at the Megaro hotel in London’s King’s Cross in late January 2025.
Simmonds joined the Megaro as chef patron in June and previously ran kitchens at the Capital hotel and Belmond Cadogan, both in London.
His new opening, named Voyage with Adam Simmonds, draws inspiration from Scandinavian cuisine and design.
The chef will make use of foraged, preserved, fermented and pickled seasonal produce to enhance flavours from the land and sea.
Dishes will include oysters with fermented apple and white asparagus; venison with ember-roasted beetroot, blackberry vinegar and thyme crumb; and roasted koji barley ice cream served with hazelnut milk and sobacha.
Interiors will make use of natural woods and light colours, while there will be no physical divide between the kitchen and dining area.
Simmonds said: “There is no aspect that we haven’t meticulously and thoughtfully considered in the quest to give our guests the best possible experience. We want to ensure that Voyage is much more than simply a place to dine, that it is rather a journey through the senses of life.”
Simmonds was executive chef of Danesfield House in Marlow, Buckinghamshire, for six years, where he won Chef of the Year (fewer than 250 covers) at the 2011 Hotel Cateys.
