Pubco Young's has completed a full refurbishment of City pub Smiths of Smithfield, which it bought last November.
Spread over four floors, the 800-capacity venue has been renovated by Harrison Design with each level designed to offer a different experience.
Smiths, a casual all-day café and bar, occupies a contemporary and industrial space on the ground floor, serving all-day brunch, sharing plates and pub classics alongside healthy, vegan and vegetarian dishes.
The drinks list features London distilled spirits, craft beers and cask ales, and cocktails alongside a wine list that includes accessible varieties and a ‘Sommelier's Selection', with many available by the glass.
Cocktail bar Death + Victory on the first floor takes its name from the plaque laid in Smithfields to honour historic figure William Wallace, who was executed in Smithfield in 1305.
The interior is inspired by the rich history of the local area while the cocktail list is divided into different time periods, from 1150 to present day, and take cues from famous historical events.
The third floor houses the Grill, taking its cue from the Smithfield meat market, which has been in operation since medieval times. It will serve locally sourced prime cuts alongside day boat fish while the drinks list will highlight the wines and lagers that are best paired with the food. A 12-seat chef's table will offer diners a view of butchery in the kitchen.
The top floor features an all-season rooftop terrace and 100-cover destination restaurant dubbed No3 at Smiths. Liam Walsh has been named head chef of the modern British restaurant that aims to champion seasonality and provenance.
Sample dishes include 28 day-aged Scotch beef wellington to share, roasted halibut, Dorset crab, Markham Farm asparagus and a slow-roasted shoulder of Hampshire lamb.
The two-strong Smiths of Smithfield restaurant business includes the newly refurbished Farringdon venue and its sister site in Cannon Street. Pub giant Young's bought the venues in November 2017.
