Will Ricker takes foie gras off the menu

Will Ricker has taken foie gras off the menu at his restaurant XO after interior designer Meg Mathews showed him pictures of how it is made.

 

The former wife of Oasis star Noel Gallagher discovered that dumplings containing foie gras were on the menu at the Belsize Park restaurant when she ate there with friends, reported the London Evening Standard.

 

Commenting on his decision to take foie gras off the menu, Ricker described it as “probably an outdated food source”, adding: “Things go on the menu for the benefit of customers and if they don’t like it then we don’t sell it.

 

“We only put things on the menu [that] people want to eat and if people feel strongly about it we’re happy to take it off. We want to look after our customers; we’re not here to repel them.”

 

The force-feeding method of foie gras production is banned in the UK, but foie gras products can still be imported.

 

Other operators that have pledged not to serve foie gras include Lord’s cricket ground, the All England Lawn Tennis Club, the Houses of Parliament and catering giant Compass Group. Prince Charles has also banned it from royal menus.
