The Westin London City, due to open in November, has shared details of the two F&B outlets set to open at the property situated on the North Bank of the River Thames.
The 222-bedroom hotel, the first in the UK for Marriott International’s Westin brand, will be home to Hithe & Seek wine bar and Mosaic restaurant, all of which will be overseen by executive chef Jorge Colazo.
Overlooking Queenhithe ward, the wine list at Hithe + Seek will be separated into ‘Hithe’, featuring ‘familiar favourites’, and ‘Seek’, showcasing lesser-known wines, selected by the hotel’s wine curator Erin Summers.
The bar will offer small plates combining recipes from old and new world wine-producing countries, such as grilled Galatian octopus with black rice and saffron aioli, and wild trout tiradito with crispy quinoa. It will also have a monthly wine club with tastings, a discount at the hotel’s dining and wellness venues, tours and events.
Named after the artwork commissioned for the front of the hotel, Mosaic is described as offering a global and “sustainably sourced menu ideal for those seeking healthier choices”, featuring the brand’s ‘Eat Well’ menu, with dishes such as crispy prawn stir-fry to hand-dived scallop ceviche.
At the centre of the restaurant, the bar will serve fresh juices in partnership with the Juicery by day and Taittinger Champagne by night, as well as a ‘Crafted at Westin’ cocktail menu.
