The University College Birmingham junior team has been named overall winner of La Parade des Chefs at this year's Hospitality Show 2015, as well as winning gold for its performance on Wednesday.
They followed on from the Combined Services Culinary Arts Team, which won gold for its menu on Monday; and the Compass Group team, which took bronze for its menu on Tuesday.
UCB was also named overall winner at the close of the Hospitality Show on Wednesday.
This year the dining event was being run as a junior talent contest. Each team was made up of five junior chefs aged 23 or under on 1 January, with a senior chef as mentor to the group.
All dishes needed to come in under a £32-a-head budget, at a gross profit of 68%.
UCBâs menu comprised:
Starter - Pan-fried halibut, crab ‘bon-bon', pickled onion, radish and cucumber, with romanesco purée, seaweed crumb and a dill velouté.
Main - Peppered venison loin with pommes Anna, fennel and ginger, wilted greens, wild mushrooms, lambâs sweetbreads, and a port and rosemary jus.
Dessert â" A Valrhona orange chocolate mousse with orange jelly, blood orange sorbet, chocolate soil, crème Anglaise, and a caramel wafer.
The contest was sponsored by Delice de France/Coup de pates, and also featured students from UCB as front-of-house.
Salon Culinaire chef director James Tanner congratulated UCB on its success, and particularly thanked the front-of-house team for their hard work throughout the whole three days.
The Hospitality Show 2015 took place at Birminghamâs NEC on 19-21 January.
