Tommy Banks and Adam Maddock to oversee ‘mammoth’ restaurant offer at Saltmoore resort

The pair will develop the F&B for two bars and four restaurants at the upcoming hotel and wellness retreat.

Tommy Banks is to join Adam Maddock in overseeing the food and beverage offer at the upcoming Saltmoore wellness resort in North Yorkshire.

 

Banks, whose family is behind the Michelin-starred Black Swan at Oldstead and Roots in York, has joined the project as consulting executive chef.

 

Maddock took on the role of head chef in June after leaving his position at the Fife Arms in Braemer earlier this year.

 

Together they will oversee a culinary offer including two bars and four restaurants across the wellness retreat, which is due to open this autumn.

 

Saltmoore occupies the former site of the Raithwaite Sandsend hotel, which was sold to developers last year off a £12m guide price.

 

It is due to reopen with a spa and two new hotels, Saltmoore House and the Beach House, where room rates will start from £290 a night with breakfast included.

 

Which restaurants will open at Saltmoore?

 

Banks and Maddock will oversee all the food and beverage at the resort including a Wellness café that will serve bone broths, seasonal salads and smoothies.

 

The laid-back Brasserie will make use of local ingredients such as fish and heather honey from the moors to offer dishes such as smocked haddock scotch eggs and butter chicken pie.

 

Formal dining room Calluna, named after the Latin word for heather, will open in Saltmoore House in 2025 and serve a hyper-seasonal menu inspired by the moors and the coast.

 

Meanwhile, a family-friendly pizza restaurant will open at Beach House in 2027.

 

Saltmoore House will also be home to a bar serving traditional and speciality cocktails garnished with foraged ingredients and botanicals grown on site in the kitchen garden.

 

An outdoor terrace will open during the summer months with live music and barbecues and Saltmoore will also host events, masterclasses and guest chef pop-ups.

 

Banks said: “When I was asked to take on the mammoth project that is Saltmoore’s food and drink offering as consultant chef, I was incredibly excited.

 

“I’m a huge champion of Yorkshire, and what Adam and I have been working on together is going to be truly special - I’ve had a lot of fun crafting an array of menus and dining experiences to suit all dining styles. Whitby and Sandsend is a very special place for me, and Saltmoore is going to be an incredible addition to the area.”

 

Maddock added: “Overseeing multiple outlets and giving each its own unique personality is a challenge I’m looking forward to. I’ve learned under some fantastic mentors throughout my career and I’m passionate about doing the same for my team while crafting dishes that speak to the Yorkshire Moors.”

 

The retreat will be headed up by general manager duo, Peter Boyle and Jayne Cartwright, formerly of luxury South Devon hotel, Gara Rock.

 

Saltmoore marks the first hotel project in northern England by property development firms O’Shea Group and Galliard Homes.
