Chef Tom Sellers is to open a restaurant at the upcoming 1 Hotel Mayfair overlooking London’s Green Park.
The property is due to launch in 2023 and will be the first European site for luxury lifestyle brand 1 Hotels, which has sites in the United States, Canada, and China.
Details on Sellers’ plans are scarce, but the chef said the partnership would see the restaurant “push the boundaries of zero-waste, conscious creativity”.
The chef also runs two-Michelin-starred London venue Restaurant Story, which serves a creative, £185, 10-course tasting menu.
Sellers said: “I have always loved classical cooking and I feel now is the time to present world class produce sourced sustainably and celebrated in the season we find it. The philosophy will be underpinned by knowledge and executed with creative thought and detail.”
The nine-storey 1 Hotel Mayfair will feature 181 rooms, a bar, in-house café and fitness and wellness centre.
The 1 Hotel brand is operated by SH Hotels and Resorts, a subsidiary of Starwood Capital Group. Its London site is being developed with Crosstree Real Estate, an investor which also backed hotel projects such as the Standard, London in King’s Cross and Mama Shelter in Shoreditch.
