Tom Kemble has been appointed head chef at the Pass at Exclusive Hotels and Venues' South Lodge hotel, replacing Ian Swainson.
Kemble will join the three-AA-rosette restaurant in Horsham, Surrey restaurant on 24 January when it reopens having previously worked in the same role at the Michelin-starred Bonhams restaurant in London's Mayfair.
He also previously worked at the Michelin-starred Hedone in London as a sous chef and the two-Michelin-starred Fäviken in Sweden.
With his new appointment will come a revised menu offering; a five-course set lunch will be served on Saturdays and Sundays, priced at £50. Dinner will be served Wednesday to Sunday, where a choice of a six- or eight-course menu will be available, priced at £70 and £90 respectively. The restaurant is currently closed and undergoing a refresh.
Kemble said: "I'm very excited to be taking up my new position at the Pass… I will focus on seasonal, high-quality produce-led cooking, working with a supplier network that I have established over the last five years, as well as building new relationships with local producers and making the most out of the walled kitchen garden on site."

Swainson leaves the Pass after more than two years. He replaced Matt Gillan in 2016, who left to open Pike & Pine and Red Rooster in Brighton.
