Tom Brown, head chef of the Michelin-starred Outlaw's at the Capital, is to leave to set up his own solo restaurant.
Brown, who has worked for chef and restaurateur Nathan Outlaw for the past six years, and earlier this year won one of The Caterer's coveted Acorn Awards for the 30 brightest hospitality professionals under the age of 30, will launch his new venture in London's Hackney in January next year.
Brown was appointed head chef at Outlaw's at the Capital in January 2016. Originally from Cornwall, he was head chef at Outlaw's former restaurant at the St Enodoc hotel in Rock, Cornwall for three years.
Announcing the news on Instagram, Brown said: "For the last six years, I've been fortunate enough to have the privilege and honour of working for my amazing mentor and friend Nathan Outlaw and now it's time to branch out on my own.
"I'm so incredibly grateful for all the support I've had during that time. I'd be nowhere without it. Thanks so much as well to Kate Levin [general manager at the Capital], my amazing team of chefs and everyone else at the Capital hotel for everything over the last two years."
Outlaw said: "Tom has been a huge part of my team for the past six years. The last year has been an amazing one for him, moving to London, retaining our Michelin star, receiving an Acorn Award and doing so well on Great British Menu. The time is right for Tom to go solo and carve his own path. He has all the skills and passion to do great things. I'm very lucky to have had him working with me and I am glad I can help him move on and support him further with his own restaurant. I'm like a proud big brother!"
In a statement regarding Brown's departure, the Capital hotel said: "The team at the Capital hotel would like to wish head chef Tom Brown every success as he embarks upon the next stage in his career and opens his new restaurant.
"Tom has been a great asset to Outlaw's at the Capital, taking the team from strength to strength, and we now look forward to this next chapter for the restaurant as sous chef, Andrew Sawyer, takes the helm alongside Nathan Outlaw."
