Santa Maria
Santa Maria, a Neapolitan pizza company that started eight years ago in Ealing in west London, has opened its third location on New Cavendish Street in central London. It will join its second site in Chelsea, which opened in 2016.
The interior is art deco-themed with a colour scheme of pinks, greens, yellows and blues chosen to reflect the buzzy retro feel of the Italian coffee bars of central London in the 1960s. The business remains independent and has avoided private equity and other offers of investment, allowing owners Pasquale Chionchio and Angelo Ambrosio to retain full control.
The restaurant does not take bookings, and while much of the menu will offer the same pizzas as the other sites, there will be more vegan options as well as collaborations with other chefs.
The pizzas are made with San Marzano DOP tomatoes, Fior di Latte mozzarella, Italian cured meats and sausages made from free-range, rare-breed pigs from North Yorkshire, while vegetables are as locally sourced and as seasonal as possible.
