The Ivy Collection eyes Exeter restaurant site

The Ivy Collection has submitted plans to Exeter City Council to transform a former Waterstones book store into a new restaurant.

 

Planning consultancy Pegasus Group has submitted plans on behalf of Troia Restaurants (the director of which is Richard Caring, who oversees both the original Ivy restaurant and the Ivy Collection) for the site at 19-21 Cathedral Yard Exeter.

 

The plans detail the main restaurant and seating areas would occupy the ground and first floors and would create full-time employment for approximately 100 staff. The restaurant would also have a 24-cover outdoor seating area.

 

The plans stated the restaurant "would bring a high end, upmarket restaurant to Exeter's city centre's which would further expand and diversify its current leisure offering. In addition, the proposals would reinvigorate and improve the existing shopfront and overall aesthetic of the building whilst retaining both frontages".

 

The Ivy Collection recently revealed plans to open a new restaurant in Harrogate, Yorkshire, as well as plans to open a brasserie in Manchester's Spinningfields district and an Ivy City Garden restaurant next month.
