Sushisamba restaurant group is to take the 10th- and 11th-floor rooftop space at the W Edinburgh hotel, which is due to open in 2022.
The restaurant concept, which offers a fusion of Japanese, Brazilian and Peruvian cuisine, will be the brand’s third UK location and its first outside of London. It will feature a main dining room with views of Edinburgh's skyline, a bar and lounge, a chef’s table and outdoor terraces.
Omar Gutierrez, chief operating officer of Sushisamba, said: “Edinburgh and its international appeal make it a natural fit for Sushisamba’s third UK location as we continue to expand our brand globally. We look forward to unveiling our cutting-edge plans and are honoured to join the growing list of pedigree brands that make up St James Quarters’ iconic estate.”
Ed Webb, director of development management at St James Quarter, the mixed-use development in which the hotel will be based, said: “From the start, we’ve focused on ensuring St James Quarter attracts world-leading brands and securing Sushisamba for the rooftop of W Edinburgh matches this ambition. The Sushisamba brand and offer is a perfect fit for our vision and is a fantastic addition to the existing food line-up at St James Quarter.”
The 244-bedroom W Edinburgh will become the second W hotel in the UK, joining its counterpart in London's Leicester Square, which opened in 2011. The brand is part of Marriott International.
The £850m St James Quarter development is set to open the first phase of its retail, dining and leisure elements in spring 2021. As well as restaurants and bars, it will include a boutique Everyman Cinema and a Roomzzz aparthotel.
