Chef Merlin Labron-Johnson will launch a new restaurant in Somerset with a focus on farm to table cooking.
Labron-Johnson, formerly of the Woodhead Restaurant Group, is due to launch the small site in November with a focus on hyper-local sourcing.
He will continue to serve as a consultant at the Conduit, a private member's club in Mayfair, London.
He wrote on Instagram: "I am very excited to announce that in November I will be opening a tiny farm-to-table restaurant in the heart of rural Somerset.
"We will serve a little menu of home grown organic vegetables and products sourced from friends in the surrounding villages. There will be gorgeous bedrooms, fine cider and lovely wine."
The chef is yet to announce the site's location, name or any hotel partnership it may be involved in.
The chef announced his departure from the Woodhead Restaurant Group last October. Labron Johnson launched the group's Portland restaurant in 2015, gaining a Michelin star a year later.
At the time of his resignation he served as executive chef of both Portland and another of the group's restaurants, Clipstone.
