Daniel Cox, the former head chef at Roux at Parliament Square, is set to join Simon Rogan's research kitchen Aulis.
Cox left Roux at Parliament Square - a collaboration between Michel Roux Jnr and Restaurant Associates - in July last year, just 10 weeks after the restaurant opened.
The 2008 Roux Scholar said at the time that he wanted to pursue other opportunities.
He will now become director of Aulis (the development kitchen attached to L'Enclume in Cartmel, Cumbria), assisting Rogan in co-ordinating all food development for L'Enclume, Rogan & Co and the recently opened Roganic.
As well as providing training and consultancy, Cox will also be responsible for improvements and forward planning at L'Enclume's 15-acre farm and developing a foraging operation for all three restaurants.
Cox won the Roux Scholarship in 2008. Most recently he was working as head chef for Verbier Exclusive in Switzerland.
