Simon Gregory appointed exec chef of Bluebird ahead of expansion

D&D London has appointed Simon Gregory executive chef of Bluebird Chelsea ahead of the brand's expansion in London and New York.

Gregory will oversee the original Chelsea restaurant as well as the development of the Bluebird Café, due to open at Television Centre in London's White City in early 2018.

Originally from Australia, Gregory moved to London in 2003 to work in the three-Michelin-starred Restaurant Gordon Ramsay. He remained with the Gordon Ramsay Group for 11 years, where he worked his way up to executive chef looking after restaurants including Petrus, Bread Street Kitchen and the Savoy Grill.

He most recently spent three years as executive chef of the Ace Hotel London looking after the hotel's F&B services, including the Hoi Polloi brasserie.

Gregory said: "I am really excited to be working with D&D and at Bluebird Chelsea. We are looking to take things to the next level with the offering and there are a lot of brilliant plans for the future; so to be a part of the process is fantastic."

The original Bluebird restaurant on Kings Road in London was relaunched last year after a £2m refurbishment, having been operating for some 20 years. D&D London also recently revealed plans to expand overseas, with Bluebirds due to open in New York at the Time Warner Centre next spring and in the Hudson Yards development in March 2019.

Founded by Des Gunewardena and David Loewi, D&D London also operates restaurants, bars and hotels including the Michelin-starred Angler, Aster, Launceston Place, Coq d'Argent and Skylon.
