November opening date set for Silo

Doug McMaster’s zero-waste restaurant concept Silo is set to open in London’s Hackney Wick on 5 November.

Silo, originally anticipated to open in September, will join Crate Brewery in the White Building. It will open for brunch from 10am on weekends and from 6pm for dinner, serving a continually changing menu of 10-15 dishes. Crate Brewery launched a £500,000 crowdfunding campaign earlier this year to bring the Brighton-based restaurant to the site.

The wine list will be put together by wine manager Ania Smelskaya, previously of Sager + Wilde, Silo Brighton and Plateau Brighton, and will be sourced from small, artisanal producers, in line with Silo’s philosophy.

The interior focuses on sustainable design and will feature a canalside cast-iron staircase, steel-framed windows and red-painted steel trusses. The materials used will include cork, mycelium, and upcycled plastic and leather, showcased in a large, hand-crafted counter by Smile Plastics, made from upcycled plastic packaging.

McMaster said: “I’m thrilled to be joining the team and opening Silo in London – it will, of course, follow the same philosophy with sustainability at the forefront, but we’re constantly raising the bar when it comes to upcycling and zero waste, so there are more exciting developments to come.”
