Roy Brett to open Ondine St Andrews at Seaton House hotel

Chef Roy Brett is to open an outpost of his Edinburgh restaurant Ondine at the upcoming Seaton House hotel in St Andrews, Scotland.

 

The boutique hotel will launch in autumn 2024 and feature Ondine St Andrews, Brett’s first new venture since the opening of his acclaimed Edinburgh restaurant in 2009.

 

It will offer a menu celebrating local produce alongside curated wines, cocktails, and whiskies.

 

Seaton House is a Victorian townhouse that was formerly known as the Scores Hotel. It is being redeveloped US-based Links Collection and will be operated by management firm Valor Hospitality Partners.

 

The hotel overlooks the first tee on the Old Course, the oldest golf course in the world, and features views of the Fife coastline including West Sands Beach, which is known from the 1981 film Chariots of Fire.

 

Guests will be able to choose from 40 luxury bedrooms and three suites, while five rooms will feature their own private terrace.

 

Approximately 70 jobs will be created with the reopening of the hotel and the owners plan to partner with local producers.

 

Euan McGlashan, global co-founder, and chief executive officer at Valor Hospitality Partners, said: “The town of St Andrews have been supportive all along and we are eager to make the local residents very proud of Seaton House. The incredible food and beverage offerings are aimed at guests and locals alike, and we hope that Ondine becomes a fan favourite in the town.”

 

Ondine Edinburgh is recommended in the Michelin Guide Great Britain and Ireland, although it does not hold a star or Bib Gourmand. The red book praises the restaurant as “one of the most popular places in Edinburgh for fish and shellfish”.
