Michelin-starred chef Robert Ortiz of Lima Fitzrovia has been announced as guest judge for the Skills for Chefs 7th annual UK Young Restaurant Team of the Year competition.
David McKown, director of Skills for Chefs said: "We are very excited that Robert Ortiz, a pioneer of Peruvian cuisine, will be our special guest judge for the grand final and this will help elevate the status of this national competition."
The theme of the competition has also been revealed as Latin American. Teams are required to construct a menu that features fish, beef and chocolate. Closing date for entries is 2 March.
Ten teams will be selected for the semi-finals in May with the best five teams competing in the Grand Final on 4 July.
The prize for the wining team will be a study tour to Colombia sponsored by MSK Ingredients. The tour will include a visit to cocoa research centre Granja Luker.
