The team behind Holm in Somerset have confirmed they will be opening seven ensuite bedrooms above their restaurant in November.
Founders Nicholas Balfe, Mark Gurney and Matt Bushnell, who also operate south London neighbourhood restaurants Levan and Larry’s, opened Holm on the ground floor of a three-storey former bank in South Petherton in November 2021.
Speaking to The Caterer in March this year, Balfe revealed plans to cover the pre-opening costs of the rooms through a £60,000 crowdfunding campaign.
He has since decided not to pursue the crowdfund, and added: “It was our initial plan but it’s not something we’re focusing on presently as circumstances have changed.”
The rooms have been designed by architect Gundry & Ducker and project coordinator Decca Lang. They mirror the style of the restaurant, with features such as exposed lime plaster, ceramic, wood and muted tones.
Three of the rooms have roll top tubs and one bedroom has a four-poster bed.
Furniture was sourced by Isobel Gordon & Co of Origo House and the Holm team have worked with South Petherton resident and furniture designer Tortie Hoare to build bespoke oak headboards for the beds and mini bars.
In addition to the bedrooms, the upstairs area will feature a mixed-use studio space with an honesty bar that can also serve as a venue for private functions and community events.
The downstairs restaurant also added a courtyard dining terrace and a quarter-acre kitchen garden during the renovation period.
New dishes will include Cornish crab ravioli, fennel, bisque; braised beef shin croquette, mustard mayonnaise, pickles; and dark chocolate tart, cherries and crème fraiche.
Rooms will open on 6 November available for £140 a night.
