Paul Greening has been appointed executive development chef at the Burger & Lobster restaurant group.
In his new role he will oversee menu development, chef recruitment and training, and will work closely with suppliers. Burger & Lobster was founded in 2001 and now operates 16 restaurants worldwide, including nine in London as well as New York, Singapore, Bangkok, Kuwait and Malaysia.
Greening, originally from New Zealand, has cooked around the world, including at the Pier Restaurant in Rose Bay, Sydney; Restaurant 290 in Wellington, and at both Guy Savoy and Pierre Gagnaire in Paris.
His UK experience includes group executive chef roles at the Aqua Restaurant group, Australasia in Manchester and Novikov in London.

Greening is known for combining Asian ingredients with modern European cooking techniques and has written numerous articles on pickling, fermentation and natural wild foraging.
