The 50-cover, 1,500 sq ft site secured by leisure property agency Shelley Sandzer, is located at 56 Ship Street, in Brighton.
Spanning three floors, Patty & Bun Brighton will serve the same menu its sites in the capital, including the Ari Gold (beef patty, cheese, lettuce, tomato, pickled onions); Smokey Robinson burger (beef patty, cheese, tomato, caramelised onions, bacon); Hot Chic chicken burger (marinated buttermilk fried chicken, coleslaw, pickled cucumbers, lettuce, smoked garlic aioli); brisket nuggets; and cheese balls.
It joins sites in Marylebone, Notting Hill, Hammersmith, Liverpool Street, Soho, Shoreditch, Fitzrovia and Hackney alongside a prep and development kitchen in London Fields and a permanent residency in Swingers London.
