Tyler King, a former senior sous chef at Michelin-starred restaurant Prism in Berlin, has opened a modern Scottish restaurant Bridge 15 within Edinburgh gastropub the Bridge Inn.
The 28-year-old grew up in the Scottish fishing village of Pittenweem and will use his menu to showcase local ingredients using techniques picked up during his international travels.
Before moving to Germany, King worked in the kitchens at Edinburgh restaurants Number One at the Balmoral hotel and Castle Terrace.
His evening restaurant at the Bridge Inn will serve daily specials and regular dishes such as Arbroath smokie doughnut with spring onion emulsion; mushroom ravioli with egg yolk pureé, mushroom broth, black garlic and puffed rice; monkfish mussel XO with burnt leek, pine nut and vermouth sauce; and Crowdie cheesecake mousse with rhubarb and toasted oats.
King is also overseeing the pub’s bar menu, which includes a daily changing pie and new all-day Sunday roast.

Fridays has opened its first quick-service restaurant in Dundee, ahead of plans to launch up to 30 sites nationwide over the next three years. It offers dishes to eat in or takeaway, with new menu items including a Bucket of Bones and a Boneless Chicken Dog.

The team behind East London’s Sun Tavern and Discount Suit Company bars has launched a 12-cover bar that acts as an incubator for new drinks development. The bar will be an extension of the brand’s online shop.

Social enterprise Humdingers Catering has launched its second bakery and soup kitchen in North London. The space will host evening events and is open to anyone in need of a hot meal. The original soup kitchen served 800-1,000 free hot meals a week
