Ollie Couillard set to open own restaurant

Ollie Couillaud, head chef at Tom Aiken's second restaurant Tom's Kitchen, has confirmed to Caterer he is leaving to open a new venture at London's Grosvenor House hotel.

 

Couillaud, who joined the Chelsea eatery in November last year, is to launch a 130-cover French brasserie at the five-star Park Lane hotel in September.

 

The kitchen at Couillaud's restaurant, which will also include a bakery and an ice-cream parlour, will be overseen by head chef Guy Bossom, former head chef of the Oliver Peyton Group and the People's Palace restaurant at the Royal Festival Hall.

 

Irish chef Richard Corrigan is also believed to be set for Grosvenor House.

 

Grosvenor House is currently undergoing a multimillion-pound refurbishment which is expected to be completed by early-2008 when the hotel will be rebranded as the first JW Marriott property in the UK.
