Noma to close and reopen with ‘urban farm'

Celebrity chef René Redzepi is to close his two-Michelin-starred Noma in Copenhagen and reopen it in 2017 with a "new menu and a new mission".

 

The existing Noma is expected to be closed on New Year's Eve in 2016, before being replaced by a new business with an "urban farm" with a restaurant at its centre.

 

The ambitious project, which is expected to be similar to chef Dan Barber's Blue Hill at Stone Barns in New York, will relocate to Copenhagen's "freewheeling Christiania neighbourhood", according to The New York Times.

 

Plans include building a greenhouse on the roof of the restaurant, having a portion of the farm "floating" and appointing a full-time farmer.

 

Redzepi (pictured) said he wanted to see a "dramatic evolution" of his restaurant, which he has now been running for 12 years.

 

He is also expected to enter a partnership to open a second restaurant. It will open in Copenhagen and will be more casual than Noma. Chef Kristian Baumann, who is currently in the kitchen at Noma, will run the new venture.
