Chef Nieves Barragán Mohacho and José Etura will open Sabor, a Spanish restaurant, bar and asador, on London's Heddon Street this autumn.
The pair, both Spanish, met at London's Barrafina restaurants, where Nieves Barragán Mohacho was executive chef for the group for nine years, and Etura spent 10 years, becoming the group's general manager in 2009.
The name Sabor, meaning ‘flavour' in Spanish, reflects the restaurant's focus on the flavours of Spain, through the use of traditional ingredients and cooking methods, and a relaxed approach to dining. The restaurant is being backed by JKS Restaurants, the London restaurant group behind Gymkhana, Bubbledogs, Lyle's and Bao.
Spread across two floors, the ground floor will feature a dining counter surrounding an open kitchen and fresh seafood display. The kitchen will serve regional dishes from across Spain, including those from the Basque country and Catalonia. A separate bar area will offer sherries, txakoli, vermouths, beers and wines.
Upstairs the focus will be on Galicia and Castile with a menu centred around two specialities from those regions - octopus and suckling pig. Galician octopus will be cooked in traditional copper pans with olive oil and paprika while a Castilian roast suckling pig will be cooked in the asador (a traditional wood fired oven).
The restaurant is backed by JKS Restaurants, owned by siblings Jyotin, Karam and Sunaina Sethi. The Sethis own Michelin-starred Trishna in London, Michelin-starred Gymkhana in Mayfair, as well as Hoppers in Soho. They also back a number of restaurants including Michelin-starred Lyle's in Shoreditch, Bubbledogs on London's Charlotte Street, and Bao, which has sites in Soho, Fitzrovia, and Netil Market.
