Beardshaw, who has worked with Tom Kerridge for the past 14 years, is planning to launch Starling next month.
Nick Beardshaw, the former head chef of Kerridge’s Bar and Grill in the Corinthia London, is due to launch his debut restaurant, Starling, at the end of August.
The 40-cover restaurant will offer seasonal British ingredients crafted with modern techniques. It will be the first time Beardshaw has worked independently, having collaborated with Kerridge for the past 14 years.
Starling has been designed by Eve Cullen-Cornes and takes its inspiration from the habitat of a starling. It features woody tones, gold leaf touches, copper lighting and counter seating.
The restaurant is located in Beardshaw’s home-town of Esher in Surrey and will offer a succinct menu with no more than five dishes per course.
Dishes will include ‘A Moon Shaped Pool’, his winning fish starter from Great British Menu 2023, as well as Creedy Carver duck, Cornish jumbo plaice and Himalayan salt-aged steaks.
Starling will see the return of his dessert and Banksy tribute ‘Balloon Girl’, also of Great British Menu fame, which was previously available at Kerridge’s Bar and Grill.
The wine list has been created by general manager James Shaw, who joins Starling from Restaurant Gordon Ramsay, where he was assistant head sommelier.
