Former Locanda Locatelli sous chef and wine buyer duo Frederico and Max Sali are to launch their first solo venture this summer with the backing of their erstwhile mentor.
The brothers, who worked with Giorgio Locatelli for more than a decade, first at Zafferano and then at Locanda Locatelli, will open Tinello in London's Pimlico towards the end of July.
Meaning ‘the dining area in a family kitchen', the restaurant will comprise an intimate 45-seat dining room offering a regional Italian menu with a focus on dishes from Tuscany, where the brothers are from.
"The menu will be divided into starters, fresh pasta dishes and main courses and we will also offer a selection of ‘small eats', tiny dishes that can be enjoyed in between courses or as side dishes," Max Sali told Caterersearch.
"We're opening Tinello with the financial support of Giorgio and Plaxy Locatelli and while they are purely investors, I'm sure that Giorgio will also guide us on how to run the business. Who better to ask for advice than him?"
Locatelli added: "It seemed a natural evolution to support Max and Federico in their new venture, and to play a part in this dream which they have had since they were young. I am delighted to be involved in Tinello and I look forward to seeing the restaurant progress - I am sure it will be a great success."
