Jonathan Felix has been appointed executive chef at the Hyatt Regency London – The Churchill hotel, replacing Mark Sainsbury.
Felix joins the five-AA-starred, 440-bedroom hotel in Marylebone from the same role at the Hyatt Regency Andares Guadalajara in Mexico, where he has been for the past two years.
Originally from Mexico, he has been working for Hyatt since 2014, having also worked as executive chef at the Hyatt Regency Mexico City, before moving the Hyatt Regency Andares to work on the opening.
Sainsbury had been executive chef of the hotel for the last two years and has moved back to Australia.
Felix said: "In my role, I'll be overseeing the full culinary team and I am excited to work alongside the talented chefs and bring my personality and experience across all dining outlets. The Montagu Kitchen's ethos of using local, seasonal and fresh produce pairs perfectly with mine and I'm looking forward to executing this across all of the menus."
In his new role, he will be overseeing the hotel's British seasonal dining restaurant the Montagu Kitchen, the Churchill Bar & Terrace, in-room dining and the banqueting menus for all events and meeting spaces.
