The opening of YTL Hotels' Monkey Island Estate in Bray is now to take place at the end of the year as the building is finalised.
The team at the Berkshire property had originally suggested that the hotel may open in the late spring or early summer of 2018.
Former F&B director of the Savoy in London, Lee Kelly, will be general manager of the property and Will Hemming, previously head chef of Simpson's in the Strand, will be executive chef.
The restored island estate will consist of 38 bedrooms plus three deluxe suites, all designed by New York-based Champalimaud Design, which designed YTL's first British property, the Gainsborough Bath Spa.
The property was one of three acquired by the Malaysia-based hotel group in September 2016, alongside the Glasshouse hotel in Edinburgh and the Academy in London's Bloomsbury.
