Michele Stanco and Melissa Fergus will join the team at Jonny Lake and Isa Bal's debut restaurant Trivet in London as head chef and restaurant manager, respectively.
Lake and Bal, who held the positions of executive head chef and master sommelier respectively at the Fat Duck in Bray, Berkshire, will open their new restaurant, wine bar and cellar in Bermondsey this autumn. Both Stanco and Fergus had previously worked alongside the pair at the Fat Duck.
Stanco, from Frigento in the Campania region of southern Italy, joined the three-Michelin-starred Bray restaurant in 2012 and was promoted to sous chef two years later. After five years he took a break from the restaurant taking on a development chef position and working with Lake on events.
Australian Fergus joined the Fat Duck as a junior waiter in 2015 after meeting the manager of the restaurant during its relocation to Melbourne. In the three years she was with the team she rose to the position of assistant manager.
Lake and Bal have described Trivet as an "informal, high-quality dining restaurant utilising the finest ingredients and wines".
