Ramen restaurant Kanada-Ya is to launch its third site next year in London's Islington.
The menu at the new 55-cover restaurant on Upper Street will feature the same selection of ramen as the Picadilly and Covent Garden sites, in addition to new additions such as gyoza, an extended sake menu and a cocktail list.
Specialising in Tonkotsu ramen, Kanada-Ya was founded by Kanada Kazuhiro in Japan, in 2009. All the restaurants make noodles on-site, and they are cooked according to customers' requests for firmness.
Kanada-Ya's signature ramen is made up of noodles, tonkotsu broth, wood ear fungus mushroom, spring onion, chashu pork belly and a secret sauce developed by Kazuhiro.
