Former Fat Duck colleagues Jonny Lake and Isa Bal have announced they will open their new London restaurant, wine bar and cellar on 29 October.
Trivet, in Bermondsey, will feature an a la carte menu in the restaurant as well as dedicated all-day menu in the bar, serving snacks, small plates and mains.
Sample dishes include a pici pasta dish inspired by the Lake and Bal’s travels through Tuscany; chicken with a vinegar sauce from Lyon; and a baked potato dessert inspired by a sake tour through Northern Japan.
Lake said: “Isa and I have travelled extensively and are always inspired by the extraordinary culinary history and international diversity around us. We also share a passion for the creative process where we start with a simple idea and then explore countless flavour and texture combinations until it evolves into something new.”
The wine list will feature more than 300 varieties, which Bal said was inspired by the history, culture and heritage of wine making around the world.
“Our wine list will follow the historic beginning of wine and meander its way through to present day. We will carry wines from classic wine producing countries such as Italy and France as well as acknowledging the root of the viti-viniculture, including wines from Georgia, Armenia and Turkey amongst others,” he added.
The interior design by DerinYesil Architects will aim to create an atmosphere of “Nordic functionality combined with the warmth of the Mediterranean and a little fun” through the use of textured surfaces of natural wood, brushed metal and polished stucco alongside colourful banquette seating and pieces of art.
Trivet will be the first venture for the chef and master sommelier who worked together for more than 12 years at Heston Blumenthal’s Fat Duck Group in Bray. Bal and Lake are pictured with head chef Michele Stanco and restaurant manager Melissa Fergus.
