Jason Atherton to launch Betterment restaurant at Mayfair's Biltmore hotel

Jason Atherton has revealed plans to launch the Betterment restaurant within the Biltmore hotel in London's Mayfair.

 

The 308-bedroom hotel in Grosvenor Square, formerly the Millennium Hotel London Mayfair, is currently undergoing a £60m redevelopment before it relaunches as the Biltmore later this year under Hilton's luxury LXR Hotels & Resorts brand.

 

The launch of the restaurant will mark a return to the prestigious postcode for Atherton, who rose to prominence while launching Maze for the Gordon Ramsay Group at the London Marriott hotel in 2005.

 

Atherton said it was "incredibly exciting" to be working on the launch of the hotel and an "opportunity we couldn't let pass".

 

He added: "We chose the name the Betterment to encapsulate our journey from opening Pollen Street Social in 2011 to today, highlighting the progression of our food, ethos and way of thinking. To be returning to Mayfair's Grosvenor Square after nine years is very special to me, and I'm thrilled to be doing it alongside world-class chef and friend, Paul Walsh."

Walsh, who launched and led Atherton's City Social restaurant for five years, achieving a Michelin star within seven months of its opening, will take the position of head chef.

 

He will lead the team to create a seasonally driven menu featuring wood-fired fish and meats, fresh seafood, signature salads and plant-based plates. At the heart of the restaurant will be an open grill, designed to bring theatre into the dining space.

 

Atherton will also take control of the Terrace, the Tea Lounge and the Pine Bar at what will be the first hotel under Hilton's luxury brand in Europe following the signing of a management franchise agreement with Millennium & Copthorne Hotels.

 

Having worked under chefs, including Pierre Koffmann, Nico Ladenis and Marco Pierre White, Atherton joined the Gordon Ramsay Group in 2001 as executive chef for Verre in Dubai. In 2005, he returned to the UK and opened Maze.

 

He left Gordon Ramsay Holdings in 2010 to launch his own restaurant company, now known as the Social Company. In an unexpected move, he launched his first independent restaurant venture, Table No 1, at the Waterhouse at South Bund hotel in Shanghai in May 2010. His flagship London restaurant, Pollen Street Social, opened in April 2011.

 

The group now numbers 15 restaurants worldwide, with London restaurants Pollen Street Social, Social Eating House and City Social all holding Michelin stars alongside his Clocktower restaurant at the New York Edition hotel.
