Chartwell house in Kent â" Winston Churchillâs former residence.
Renamed the Montagu Kitchen, the restaurant will be overseen by executive chef Mark Sainsbury, who is a Hyatt stalwart of 25 years and joined the five-AA-star, 440-bedroom property last summer.
The new restaurant concept will see British cuisine, seasonality and nature at the the heart of its menus and interiors, after Sainsbury and his team made several visits to Chartwell for inspiration.
Sample dishes include: marmalade pork belly, kale braised with barley and herbs, winter vegetables and red wine sauce; sea bass, fennel and potato bake with snap peas, carrots with lemon caper and gherkins; and apple Charlotte with puréed Granny Smith sauce and homemade smoked cinnamon ice-cream.
Sainsbury commented: âI loved growing up in the countryside in Kent, and it has been my lifelong ambition to take inspiration from the fragrant woods, meadows and fruit farms and use it in my cooking.
âChartwell house in Kent has such a fascinating history and Iâm excited to marry up my personal experience of Kent with the gardens at Chartwell to create a truly unique offering at the Montagu Kitchen.â
Designers Guild reinterpreted the Chartwell's gardens through colour, texture and pattern for the restaurant's new look.
The Montagu Kitchen will launch in mid-September 2018.
