The House of Commons culinary team has been awarded a silver medal for its efforts in the La Parade des Chefs restaurant competition at the Hospitality Show 2013 yesterday.
Working in a glass-walled kitchen at the NEC Birmingham, the House of Commons team, which comprised Nick Wort, David Bush, Andrew Ditchfield, Matt Jones, Rositsa Nikolova, Julien Pickersgill and kitchen porter Stuart Whitcher, cooked a four-course meal for 100 covers.
Their award-winning menu comprised British crab and cucumber with a toasted brown crab sandwich, a main course of slow-cooked Gressingham duck, duck liver truffle, "gem" sprouts, piccolo parsnips and natural jus; beetroot and Golden Cross goat's cheese macaron; and a dessert of bitter chocolate mousse, "passion gel" and almond sponge.
The House of Commons team is one of three teams competing in La Parade des Chefs at the Hosptality Show this year. Following on from the Olympics, the organisers decided to invite previous gold-medal-winning teams to compete for the title Best of the Best.
A team from Elior will be competing for the title today, while the Compass culinary team will running be La Parade des Chefs tomorrow.
The Hospitality Show opened yesterday and concludes tomorrow, 23 January.
