Head chef Yu Sugimoto leaves the Square as it closes for refurbishment

The Square restaurant in London's Mayfair has closed for a major refurbishment in both the restaurant and the kitchen when a new head chef, yet to be named, joins the operation following the departure of Yu Sugimoto.

 

The Square was purchased by Marlon Abela Restaurant Corporation in March 2016 from Philip Howard, who held two-Michelin-stars at the operation for almost 20 years.

 

Designed by Virgile and Partners, the restaurant will revolve around squares, featuring square glass blocks, dark parquet flooring and contemporary furniture. It will feature art from John Baldessari, George Condo, Garth Weiser, Oscar Murillo and Kevin Beasley.

 

Due to reopen in October, the Square will be divided in to two sections, a main dining area which seats 60-covers with a bar, and a 20-cover private dining area.

 

General manager Charles Peto said: "We cannot wait for our loyal, local clientele to experience the new Square. The minimal, architectural approach to the environment will set the tone of the rarefied experience, in keeping with the style and sophistication found in the menu, food execution and presentation."

 

Chairman Marlon Abela said: "The new concept will reflect an energetic, urban and contemporary attitude underpinned by elegant and luxurious style. This will re-establish the restaurant as the London destination for our discerning clientele. The new Square will take epicurean excellence to new heights and deliver an unparalleled experience in the established location amongst the capital's most illustrious art galleries."

 

Marlon Abela operates seven across London and the east coast of the United States including the two-Michelin-starred Greenhouse, Mayfair and two-Michelin-starred Umu, Mayfair; Morton's Private Members' Club, Mayfair; Green's Restaurant, St James's; O. W. Loeb Wine Merchants, Tower Bridge; MARC Fine Wines, Mayfair; MARC Patisserie & Bakery, Perivale; A Voce Madison, New York; Bistro du Midi, Boston; and François Payard bakeries.

 

Virgile and Partners has worked with Marlon Abela on projects such as the Greenhouse and Morton's Club.
