Hart brothers reveal details of new King's Cross wine bar the Drop

The Hart brothers' new King's Cross wine bar the Drop will serve a carefully chosen list alongside British bistro dishes, cheeses, meats and oysters, it has been revealed.

The wine list has been curated in collaboration with Aimee Hartley, founder of Above Sea Level and Genuwine, and will include bottles from young winemakers in classic regions as well as lesser-known wines and tested favourites.

The Harts and Somerville have said they want to dispense with “pretention or stuffiness”, and general manager Yvonne Neilson, formerly of the Marksman in Hackney, will lead the front of house team, offering a flexible service allowing guests to learn about obscure regions and makers, or just order a quick glass of the house white.

Also on offer will be a changing menu of salads, stews, pies and more, served by head chef Karan Ghosh from a limited kitchen comprising two induction rings and an oven.

Sam Hart said: “The decision to open a wine bar here came very naturally. James, Crispin and I are all great wine enthusiasts so when we saw the beautiful Victorian arches at Coal Drops Yard, we immediately had a vision of people drinking Muscadet and eating oysters there. We’re very excited to be working with Aimee and Yvonne who bring a fresh perspective, taking us a little off our natural beaten paths and helping us discover new and delicious things, as they will do for our guests!”

Design for the Drop is being led by James Hart, with Michaelis Boyd Architects and Irving and Co designers. Guests can expect a relaxed environment with timber, leather, brickwork, terracotta and a big communal table at the heart of the room.

The restaurateurs will also open their biggest Barrafina yet and Casa Pastor in the redeveloped space.
