The team behind Chick ‘n' Sours has revealed plans to launch a new fast-casual restaurant brand that aims to "remove the guilt of fried chicken".
CHIK'N will offer all-day dining made with ethically sourced ingredients when it opens at Baker Street, London W1, in mid-July.
Former DJ Carl Clarke, who co-founded the brand with business partner David Wolanski, said: "We want to offer everyone in the UK the chance to eat best fried chicken sandwiches, in terms of both taste and quality at an affordable price. We want to serve healthy, well-fed chickens to hungry, happy people."
Clarke has worked with the 2011 winner of MasterChef: The Professionals Ash Mair to create the menus, with the main focus being the restaurant's chicken sandwiches comprising crispy, buttermilk-brined chicken breast served on a warm, potato roll.
A variety of additional fillings, such as Sriracha sour cream and kimchi-flavoured slaw, and house-made barbecue sauce, barbecue mayo, cheese and pink pickled onions will be on offer.
CHIK'N will open for breakfast, serving dishes such as grilled CHIK'N sausage on a sourdough muffin with free-range egg and cheese, and hot cakes (pancakes made with waffle batter) served with either blueberries and strained yogurt or CHIK'N tenders, bacon and maple syrup.
The free-range chicken will be sourced from Castlemead in Somerset. The company said it plans to invest in the farm to maintain high welfare standards as the business grows.
CHIK'N will use rapeseed oil for frying because it has zero trans fats as well as 10 times more omega 3 than olive oil, while its fryers will consumer 40% less oil than traditional fryers.
