Gladwin Brothers to open Sussex at former Arbutus site

The Gladwin Brothers are set to launch a restaurant called Sussex in London’s Soho at the site that formerly housed Anthony Demetre’s Arbutus and Bruno Loubet’s Bistro Bruno.

 

The British dining concept, due to open next month, will be a celebration of the Sussex countryside with ingredients sourced directly from the family farm and vineyard, or local suppliers handpicked by the three brothers.

 

The restaurant will join Richard, Oliver and Gregory Gladwin’s three-strong London portfolio, which also includes the Shed in Notting Hill, Rabbit in Chelsea and Nutbourne in Battersea.

 

Chef-patron Oliver Gladwin’s menu will include home-cured charcuterie, Sussex cheeses and wines served from a counter in the main dining room. Smoked trout 'Cornettos' with blood orange pearls and dill powder; beef and horseradish crackling with burnt onion emulsion; and homemade truffled burrata will be some of the bar snacks.

 

Starters will include hand dived scallops, blood pudding, Jerusalem artichoke ‘mud and bark’ with lemon sour cream; rabbit loin and carrot terrine; and aubergine and whey cheese roulade served with tomato harissa and basil dust.

 

There will be main dishes such as roasted brill with Devon crab ravioli and sea herbs; buttered blewits served on a sourdough crumpet with labneh, duck egg yolk, buckwheat and wood sorrel; and pork tenderloin served with malted pig’s cheek, rainbow chard, lardo and broken hazelnut English miso.

 

Specials will include vinewood-roasted grouse and rare venison, chard and black figs or hare, quince and lovage Wellingtons. To finish, puddings will include dandelion custard tart and stewed plums served with marigold milk junket and hazelnut sherbet or dark chocolate and salt caramel Viennetta.
