George Barson has joined Wild by Tart in London’s Belgravia as head chef, replacing Katja Tausig who left the restaurant last year.
Originally from Devon, Barson started his career at Hugh Fearnley-Whittingstall’s River Cottage, where he reached the rank of sous chef. He then moved to London and worked at Nuno Mendes’ Viajante and Dinner by Heston Blumenthal, before spending two years as development chef at Jamie Oliver’s Fifteen.
Barson became head chef at Kitty Fisher’s in Mayfair in 2017 and was promoted to chef director the following year, working with the team to launch Cora Pearl in Covent Garden.
He joined Wild by Tart this month, where he is working with co-founders Lucy Carr-Ellison and Jemima Jones on the menu.
Carr-Ellison and Jones, who also run catering company Tart London, launched the restaurant at the Eccleston Yards development in 2019.
