French Michelin Guide 2016: New stars for Alain Ducasse and Gordon Ramsay

The new stars were revealed this morning (Monday) via Twitter on the @GuideMichelinFR account, and in person at a press conference by Michelin executive committee member Claire Dorland Clauzel, which began with a minute's silence to honour the recent death of French-born chef Benoît Violier aged 44, of Swiss restaurant L’Hotel de Ville at Crissier.Â

 

As well as the two new three-stars, there were also 10 new two-stars, including La Grande Maison â€" Joël Robuchon in Bordeaux, Paloma by Nicolas Decherchi in Mougins, and Histoires by Mathieu Pacaud in Paris.

 

The guide also revealed 42 new one-stars, featuring restaurants from across the country. Alongside Le Pressoir d'Argent - Gordon Ramsay in Bordeaux, the new one-star list included Hexagone, Saturne, Neige d’Été and La Table du 11 in Paris; Le Château de Sable in Britanny; La Table des Merville in Castanet-Tolosan; Le Favre d’Anne in Angers; and La Renaissance in Argentan, Normandy. There was also a new star for I Salti, in Belgodère in Corsica.

 

This is not the first French star for Ramsay: he also has one for his Gordon Ramsay au Trianon site.

 

Commenting on the new list, the Michelin website called the French guide “immutable” and said that it sought to “show the attachment of the guide to all those who, through their food, make the daily gastronomic scene so vibrant”.

 

It also noted that five new sites in Paris had reached the two-star level, stating: “[Two stars] is proof of the power of the attraction of the capital, which holds its own in the gastronomic battle for which the biggest metropolitan centres of the planet are fighting.”

 

The announcement concluded: “Lastly, this work is merely a reflection of a France where, come hell or high water, we cook as we breathe â€" passionately, viscerally…and where the [dining] table is an incomparable site of exchange.”Â
