Former Paradise Garage sous chef Patrick Williams and Amy Corbin to open Kudu

Former Paradise Garage sous chef Patrick Williams and Amy Corbin will open their first restaurant Kudu in January.

 

The new 46-cover restaurant, named after a type of antelope, will be located in London's Peckham and is set to open on 12 January 2018. Williams will head up the kitchen and Corbin will run front of house.

 

South African-born Williams started his career in Cape Town's La Colombe and went on to work at Camphors at Vergelegen. On moving to London he joined Robin Gill's team at the Manor, then sister restaurant Paradise Garage as sous chef. Paradise Garage in London's Bethnal Green closed last month despite positive reviews and gaining a Michelin Bib Gourmand, citing the construction of a Holiday Inn Express nearby making trading much more difficult.

 

Amy Corbin is the daughter of Chris Corbin, of Corbin & King, the portfolio of which includes the Delaunay and the Wolseley in London.

 

The seasonal menu at Kudu will feature locally-sourced, home grown and foraged ingredients. It will also draw inspiration from Williams's South African roots. Dishes will include ‘kudu bread' (the restaurant's signature bread, not including antelope), cooked in a copper pot and served with melted lardon or seafood butter, and mussel potjie pot with seaweed gnocchi. Familiar dishes will be given playful twists, such as onion and beer tarte tatin with goats' curd, and pig's head tortellini with hay bone broth and crispy onions, however the restaurant will not serve antelope.
