The restaurant is designed as a neighbourhood bistro and will also offer takeaway.
Jason and Irha Atherton have revealed further details of the team and menu at their upcoming restaurant Three Darlings in Chelsea.
Jake Oswin will lead the team as executive chef, joining from his role as senior sous chef at Dinner by Heston in London.
Meanwhile, Jason Alexander, who previously worked at the Dorchester hotel, will oversee the drinks offering as bar manager.
Three Darlings is due to open in October and is named after the Atherton’s three daughters, Keziah, Jemimah and Athena.
Designed as a neighbourhood bistro, it will seat 85 covers with an outdoor terrace and open seven days a week for breakfast, lunch, dinner and takeaway.
Signature dishes on the a la carte menu will include smoked brisket with fried duck egg and XO gravy; skate schnitzel with anchovy and Amalfi lemon dressing; and British Iberico pork chop with a seasonal chutney.
The restaurant plans to repurpose its food waste to make a hot sauce, which will be sold in-house and online through a partnership with Club Cultured.
Guests will also be able to explore a "mom and pop’s wine cellar," where wines will be available at “exceptional prices” upon request with the sommelier.
"Three Darlings is a project that’s particularly close to our hearts," said Jason. "Opening a restaurant and naming it after our daughters makes it truly special—a heartfelt tribute to both our family and my passion for culinary creativity.”
Three Darlings is one of several restaurant projects the Athertons are opening in London this year, including Sael in St James’s Market, Hot Dogs by Jason Atherton at Harrods and Row on 5 with Spencer Metzger.
Jason was awarded the International Outstanding Achievement Award at the 2023 Cateys.
