Edinburgh’s Lind & Lime Distillery partners with Fingal hotel to launch new gin

Lind & Lime gin distillery in Edinburgh has partnered with Fingal, Scotland’s luxury floating hotel, to launch its first proprietary gin brand.

 

The value of the deal has not been disclosed but it will see the distillery create a new gin exclusively for guests visiting the ship’s Lighthouse restaurant and bar.

 

Lind & Lime gin is produced by the Port of Leith Distillery at its Tower Street Stillhouse in Leith, Edinburgh, a new single malt whisky distillery which is due to open to the public this autumn.

 

Distilled and bottled in small batches, Fingal gin is a classic London Dry Gin with a blend of Fingal tea. The Ceylon-based tea is served on board and made by tea producers PekoTea at its Edinburgh factory in Leith.

 

The gin is bottled in a 70cl darted glass bottle and has been designed to reflect the glass Fresnel lenses in the lantern room of lighthouses.

 

To celebrate the launch of the new spirit, the ship’s mixologists have created a Fingal gin-based Lighthouse martini cocktail, including Fingal gin and the Wermod Great British Vermouth, created within the Dalmeny Estate near Edinburgh.

 

Ian Stirling (pictured above), founder and co-chief executive of Edinburgh-based wine and spirits producer and distributor Muckle Brig, which owns the Lind & Lime distillery, said: “Edinburgh’s historic port of Leith has a remarkable maritime and distilling heritage; for centuries this was Scotland’s gateway to the world. Our relationship with Fingal celebrates this unique story and draws on some of the traditions of the past.

 

“Today, we’re positioned right in the heart of Edinburgh’s vibrant waterfront and are both breathing new life into the port with our remarkable new vertical distillery and Fingal’s luxury floating hotel.

 

“We’re confident that the unique gin we’ve created for Fingal exemplifies the incredible glamour and style of the ship.”

 

Jennifer Campbell (pictured above), marketing manager at Fingal, said the floating hotel’s team wanted to create a London Dry Gin “with our own unique twist”, adding with the new distillery nearby, “we’re perfectly placed to work closely together and create a spirit exclusively for our guests”.
