The 16 finalists in M Restaurants and Bookatable by Michelin's Young Chef of the Year 2019 competition have been revealed.
The finalists - all under the age of 30 and listed below - were selected after submitting a four-course, £45 a head menu together with costings for 50 covers.
They will now host a series of pop-up takeover nights at M Restaurant Victoria Street from 9-13 July with diners voting for their favourite young chef, to form 50% of their final scores.
The judges' feedback will form the remaining 50%, taking into account the quality of cooking, marketing, sustainable sourcing of ingredients and handling of food waste.
The panel includes M Restaurants founder Martin Williams, M Restaurants culinary director Mike Reid, chefs Sabrina Gidda, Steve Groves, Ben Tish, Alyn Williams and James Knappett; social media influencer Felicity Spector; journalist David Ellis and The Caterer's editor Chris Gamm,
Tickets to the pop-up nights are £45, including a welcome glass of Champagne Pommery, and can be booked here.
The winner will be crowned at an award ceremony at M Restaurant Victoria Street on 4 September and receive a trip with sponsors Pommery to the Champagne region of France to explore their vineyards.
