The team behind Fallow have confirmed the opening of pop-up “beak-to-feet” chicken restaurant Fowl next month.
Chefs Will Murray and Jack Croft and executive chairman James Robson, who won the Newcomer Award at the 2022 Cateys for Fallow, will be taking over a 70-cover site at a pub previously operated by Cubitt House Group near St. James’s from 3 October.
Murray and Croft have worked with the Ethical Butcher and Rare Breed Meats to source pasture-raised and soy-free birds from regenerative farms.
Dishes include cornbread, chicken and herb butter; chicken liver parfait, black cherries and sourdough soldiers; triple crisp hot wings, sriracha mayo; and chicken fries.
Fowl will also be partnering with chefs such as Pierre Koffman and Lennie Ware for some limited-edition dishes.
The announcement comes after Robson told The Caterer that the team are opening two new sites in London this year.
