Clare Smyth announced as first operator in major Sydney development

Clare Smyth is to open a restaurant in Sydney in a new dining destination in the Australian city.

 

The chef-patron of two-Michelin-starred Core by Clare Smyth in Notting Hill, London, will be among the operators in Crown Sydney, a new development on the waterfront in Barangaroo that will include a hotel, restaurants and apartments.

 

Smyth said that the restaurant will take some inspiration from Core, but with an Australian flavour that highlights the best of the country’s produce and culinary innovation.

 

She added: “With this new restaurant I wish to build upon the success of Core. Having lived and travelled in Australia early on in my career, it feels like a home away from home and the perfect location for the restaurant.

 

“The quality and diversity of the produce available in Australia is incredible. I look forward to spending a lot of time there further exploring its food and wine regions to create our menu, which will showcase the best produce sourced from Australia’s most dedicated farmers and food producers.”

 

Smyth will be one of 14 operators at the Crown Sydney development, which will also feature a 349-bedroom hotel, residential accommodation, retail and gaming facilities.

 

Crown Sydney chief operating officer Peter Crinis said: “Partnering with a chef of Clare’s calibre is a huge coup for Sydney’s restaurant scene and our standing as a food destination – and I’m confident her restaurant will be embraced by Sydneysiders and visitors alike.”

 

He added that it was the first in a number of international chef partnerships, though the rest of the line-up remains under wraps.

 

Crinis said: "Part of being a truly global city, is having an innovative dining scene that showcases the latest food trends from across the globe but equally reflects the best that Sydney has to offer. We have hand selected the best in market – chefs that we believe showcase the latest and finest innovations in modern cuisine that will create unique dining experiences that we hope Sydney will be proud of.”

 

Core by Clare Smyth was the chef's first solo venture having left Royal Hospital Road, where she held three Michelin stars. It was awarded two Michelin stars in the 2019 guide and was the first restaurant to enter The Good Food Guide with a perfect 10 out of 10.
